Mexican Caesar Salad

Texas Brew  Salsa Mexican Caesar Salad

For the Salad:

Romaine lettuce
Tortilla chips or strips
Fresh Parmesan cheese shavings

For the Dressing:

1/2 cup Texas Brew Salsa
1/2  cup mayonnaise
1/4  cup fresh lime juice
1 Tbsp.. Dijon mustard
1 tsp. anchovy paste
1/2   cup cilantro leaves
1/4 cup parmesan cheese, grated or shredded

Blend all ingredients for the dressing in a blender or food processor until smooth. Let stand in refrigerator at least 30 minutes to thicken.  Toss with Romaine lettuce and tortilla strips or chips and serve topped with shaved parmesan.
